polly’s 99% vegan chocolate zuchinni cake with tofu frosting

here is the cake marie-claire taught polly how to make on new year’s eve:

ingredients

1 zuchinni
1 cup canola oil
1 cup cocoa powder
3 cups flour
2 cups sugar
1 tsp. Salt
1 tsp. baking soda
1 tsp. Cinnamon
1 tsp. Vanilla
1 bag semi-sweet chocolate chips
they make vegan chocolate chips but marie-claire used regular. there’s butter in it but she figured what polly didn’t know wouldn’t hurt her

directions
preheat the oven!

combine zuchini, oil, choco chips & and vanilla. have polly mix it until her arm gets tired..

in another bowl combine all the dry stuff.

pour the zuchinni bowl into the bowl with the flour & cocoa powder & mix it up some more.

pour into greased and floured cake pan.

bake at 350 for 45-60 minutes

allow to cool 30 minutes before tasting. (put it in the freezer so you can add frosting ).

watch some tv. don't think about the cake. have some popcorn instead.

vegan chocolate frosting

1 block firm tofu
2 cups confectioner’s sugar
1 cup cocoa powder
blend in blender until creamy. add some choco soy milk if too thick. don‘t let polly lick the knife as she’s icing the cake, tell her she has to wait until the cake’s done because there might not be enough.

now you can eat the cake too!
